Italian sausage soup with greens
A simple, hearty soup that's perfect for a chilly day.
If you prefer a less spicy soup, use mild Italian sausage and leave out the red pepper flakes.
1 lb Italian turkey sausage, spicy
1 med onion, diced
Remove casings from sausage and saute in large skillet with onions over medium high heat until the sausage is cooked through, breaking the sausage apart as it cooks.
NOTE: If you have a heavy stock pot that's big enough, you can do this step directly in the stock pot and save a bit of cleanup.
2 cans (14 oz each) diced tomatoes
2 qts chicken broth

8 oz uncooked pasta, any small shape
8 oz mixed greens
1 tsp Italian herbs
1/4–1/2 tsp salt
1/2 tsp dried red pepper flakes (optional)
Put sausage and onion mixture into a large stockpot with the tomatoes and broth, and bring to a gentle boil.
Add pasta and greens. Cook at a lively simmer for about 20 minutes.
NOTE: may substitute 1 cup rice in place of pasta
Shredded parmesan or other Italian cheese
Crusty baguette or bread
Garnish each bowl with shredded cheese and serve with bread
