Coleslaw and dressing with a kick

In its simplest form, coleslaw is finely shredded cabbage with some kind of dressing.

You will probably want to give the sliced apples a rough chop so they mix in better.

On the other hand, you can fancy it up and give it a dressing with some pizzaz.

The slaw
  • 1/4 head green cabbage
  • 1/4 head red cabbage
  • 1/2 head napa cabbage
  • 4 smallish carrots
  • 2 Granny Smith apples
  • 1 medium red onion
  • 1 cup pecan pieces
  • 1 cup raisins, dried cranberries, or mixed dried fruits

Make life easy on yourself and prepare all the veggies with the slicing blade of the food processor. Or knock yourself out with a mandolin or trusty chef's knife.

However you slice the apples, you will probably want to give the slices a rough chop so the pieces are smaller and will mix in better.

Dump it all into a big bowl and give it a preliminary mix with your impeccably clean hands.

The dressing
  • juice of half a lemon
  • scant 1/4 cup of sugar
  • 1/2 cup cider vinegar
  • 1 1/2 tsp salt
  • 1 tsp freshly ground pepper
  • 1/2 c mayonnaise
  • 1/2 c plain yogurt
  • 2 or 3 Tbsp prepared horseradish
  • 1 Tbsp Dijon mustard

Put everything in a small bowl and whisk it together.

Pour over the prepared cabbage mixture, toss to combine thoroughly. Cover with plastic wrap and refrigerate for at least 1/2 hour to let the flavors meld.
