Penne with sausage and greens
Quick, easy, and very tasty. The recipe could not be simpler and goes together in less than 30 minutes. It's a great dish to serve for an informal dinner with friends. This is hearty fare, so instead of dessert, go for a walk around the block!
- 4 to 6 turkey Italian sausages, spicy
- Olive oil
Remove the casings from the sausages and break them up into bite size bits. Brown in a large skillet over medium high heat to cook thoroughly.
Substitute regular Italian sausages if you prefer.
- 1/2 lb penne
While the sausage is finishing up, cook the penne in salted water, as directed on the package, about 10-12 minutes.
As soon as the penne is started, go on to do the greens.
- 1 pkg recipe-ready mixed greens (9 oz)
- 3 cloves garlic, minced
Move the browned sausage to the side of the skillet and add the mixed greens and garlic. Add a little bit of water (1/4 cup) to the pan and cover. Cook until the greens are wilted and tender. Depending on the greens used, this may take anywhere from 5 to 10 minutes.

- Cooked penne, drained (above)
- 3/4 c grated parmesan cheese
Add the penne to the sausage and greens mixture, along with with the parmesan cheese. Toss together and serve.
