Cajun pork roast
What could be simpler? Cover a boneless pork loin with this cajun rub and roast for an hour. Leftovers make terrific sandwiches.
Cajun rub
- 3 Tbsp paprika
- 1/2 tsp cayenne pepper
- 1 Tbsp garlic powder
- 2 tsp oregano
- 2 tsp thyme
- 1/2 tsp salt
- 1/2 tsp white ground pepper
- 1/2 tsp cumin
- 1/4 tsp nutmeg
Combine all the seasonings in a small bowl.
Roast
- 1 boneless pork loin, about 5 pounds
Sprinkle cajun rub all over the roast and rub well.
Place roast in a shallow pan and roast at 350°F for about an hour. Remove from oven when internal temperature is about 150°F.
Let rest at least 10 minutes before slicing.
Servings: 8-10 generous portions
