An alternate way to serve is shown here: spoon into a bowl and top with fruit, then sprinkle with powered sugar to gussy it up, if you wish

Lemon sabayon

Okay, this is not a recipe to make just before a cholesterol test. But it is too good not to make once in a while. Spooned over a mixture of fresh berries, this makes a cool summer dessert.

  • 6 egg yolks
  • 1/4 c Splenda/brown sugar mix

Combine yolks and brown sugar in a mixing bowl and whisk until the color pales slightly. (It will still be fairly dark because of the brown sugar.)

Set the bowl over a pot of hot water (simmering) and continue to whisk until the mixture thickens. It should reach a temperature of 160°F.

  • 3 Tbsp lemon juice
  • 1 Tbsp lemon zest

Add the lemon juice and zest and cook another couple of minutes.

  • 1/2 c Marsala

Add the Marsala and continue to cook for another 8 minutes, whisking constantly.

Remove from heat and set bowl over ice to cool the mixture, whisking occasionally (otherwise it will form a skin on top). The mixture will thicken some more as it cools. If necessary, thin it out with water until it has the consistency of a thick soup.

Cover and refrigerate until ready to serve.
