Grapefruit brûlée
After a long search for grapefruit recipes, I've found one that is absolutely delicious. It makes a very satisfying dessert, combining a hard, warm (hot), crust with the cooler grapefruit segments.
This is a very easy recipe, and is sure to surprise and delight.
- 2 large red grapefruits, room temperature
- 8 tsp dark rum
Cut the grapefruits in half, then loosen the segments with a paring knife or grapefruit knife.
Arrange in a broiler-proof pan and pour rum over each grapefruit half.
- 2 Tbsp cold butter, cut into small bits (no more than ¼-inch)
- 2 Tbsp brown sugar (or 1 Tbsp Splenda/brown sugar blend)
- 2 Tbsp flour
- 1/4 tsp ground allspace
- pinch of salt
Put all in a small bowl. Use a fork to combine into soft crumbs. Sprinkle the crumbs evenly over the cut grapefruits.
Note: If you have really cold hands and work quickly, you could do this with your fingers, but the butter may melt and turn it into a paste instead of crumbs. If that happens, simply press it out into a thin disk and lay on top the grapefruit.
Broil under high heat for 5 to 7 minutes, until the crumbs are browned, bubbly, and shiny. Watch carefully that it doesn't burn instead!
Serve immediately. (The topping will be very hot, but the grapefruit itself will still be relatively cool.)
