Baked French toast with blueberries

Do ahead French toast that can be prepared the night before and baked in the oven the next morning.

Psst! This tastes so good, it would make a great dessert with a dollop of whipped cream and/or a scoop of vanilla ice cream.

Custard
  • 6 eggs
  • 3 c whole milk
  • 3/4 c maple syrup
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • zest of 1 lemon

  • 10 oz bread*, cut in large cubes
  • 2 cups (12 oz) fresh blueberries

*Bread may be sourdough, French baguette, or a sweeter bread like Challah or Hawaiian.

In a large bowl, whisk all custard ingredients together until very well blended.

Add the bread and blueberries. Stir together and mix until coated.

Pour into a buttered 9x13 inch baking dish. Cover and refrigerate over night.

Topping
  • 1 Tbsp cinnamon
  • 3 Tbsp sugar

Mix together sugar and cinnamon. Sprinkle over the chilled egg/bread mixture in an even layer.

Bake 45min at 350°F until the top is golden and the filling is set.
