Banana bread

I had some bananas that got too ripe to eat and set out to make banana bread, only to discover that I lacked some of the ingredients called for in the recipe. I began substituting and rather liked what I ended up with.

  • 1/4 c Splenda® blend (or 1/2 c sugar)
  • 1/4 c molasses
  • 1/2 c (1 stick) butter
  • 2 eggs

Cream butter and sugar together then blend in molasses and eggs

  • 3 ripe bananas, mashed
  • 1 c chopped walnuts
  • 1/2 c milk
  • 1 tsp vanilla

Stir into batter

  • 2 c flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Mix dry ingredients together and stir into batter

  • Loaf pan, sprayed with Pam with flour

Pour batter into pan and bake at 350°F for about 50 min. Test for doneness by inserting a toothpick into the center of the loaf. If it comes out clean, bread is done.

Can be made into muffins (about 24). Bake for 15 minutes or until toothpick comes out clean.
