Oven-barbecued chicken wings

These are great as picnic food, a snack, or for what Hawaiians call "heavy pupus."

  • 24 chicken wings (about 5 lbs)
  • 1 tsp salt
  • 2 tsp black pepper
  • 3 tsp paprika
  • 1/4 c oil (corn, peanut, or vegetable)

Fold the small tips of the wings under the main wing bones so they wings remain compact and flat.

Mix spices and oil together in a large bowl. Toss in the wings in batches and lay in a single layer on a baking sheet with the small wing side down.

Bake 15 min in a pre-heated 400°F oven.

  • 1 cup ketchup
  • 1/4 c oil (corn, peanut, or vegetable)
  • 1/4 c honey
  • 3 Tbsp red-wine vinegar
  • 3 Tbsp white vinegar
  • 2 Tbsp Worcestershire sauce
  • 1 tsp Tabasco
  • 1 Tbsp Dijon mustard
  • 1 Tbsp garlic, finely minced
  • 4 Tbsp butter
  • 1 bay leaf

Mix all ingredients in a saucepan and bring to a boil.

Remove from heat and set aside.

Brush the sauce lightly on the wings, turn them over, and brush the other side.

Return to oven and bake for another 15 minutes.

Repeat the basting and baking

Repeat again. The wings will have baked for a total of 1 hour.
